Made using 100% 8 year old Espadin agave. The hearts of the plant are milled with a traditional Tahona (stone wheel) system and naturally fermented for up to 30 days. The spirit has been double distilled in copper pot stills, and the process is overseen by Mezcal Maestro Doroteo Garcia. This bottling uses a mix of different woods in the cooking process (which lasts 5 days) to create a smokier profile. This bottling serves up notes of smoked white peach, grassy agave, pineapple, lime, soft wood smoke, peppery smoke, coriander and cinnamon spice.
